Costadilà Mòz is a radically dry and textural interpretation of Moscato, stripped of any aromatic sweetness expectations and reimagined through a natural, skin-contact approach. Made from Moscato Fior d’Arancio and Glera, sourced from volcanic soils in the Euganean Hills (including the historic vineyards of Villa dei Vescovi in Torreglia), it reflects a more gastronomic and austere vision of what Moscato can be when fully fermented and left unfiltered. Two weeks of skin maceration for the Moscato component, spontaneous fermentation, and refermentation in bottle with dried grape must give structure, depth, and tension rather than simple fruitiness.

In the glass, it shows a bright straw yellow. The nose is expressive yet not overtly perfumed, with ripe citrus, orchard fruit, and floral hints, layered with subtle herbal and mineral undertones. On the palate, it is dry, vibrant, and linear, with a fine, saline edge and a light, pleasantly bitter note that adds complexity and length to the finish. The effervescence is delicate and integrated, supporting rather than dominating the structure.

This is what Mòz is about: a reinterpretation of Moscato away from sweetness and aromatics, toward dryness, grip, and drinkability at the table. It keeps the identity of the grape but removes its cliché, transforming it into a serious, food-driven sparkling wine with volcanic energy and natural precision.

Perfect with fish, shellfish, and the delicate cuisine of the Upper Adriatic, where freshness and salinity find natural harmony.
