
Marolo Grappa di Nebbiolo
Grappa di Nebbiolo brings together pomace from the Barolo, Barbaresco and Roero areas, translating Piedmont’s most noble red grape into a spirit of perfume, structure and quiet austerity.
Marolo’s work is based on varietal distinction. Nebbiolo is not treated in the same way as Moscato or Barbera: its floral character, savoury complexity and firmer structure require a grappa with greater depth and a more measured evolution.
After distillation in discontinuous bain-marie stills, the spirit rests in stainless steel and then spends 6 months in small oak barrels. The wood gives it a pale amber colour and a subtle savoury richness, but does not dominate the identity of the grape.
In the glass, it shows a light amber hue. The nose opens with rose, dried violet, red cherry and raspberry, followed by liquorice, tobacco, herbs and a gentle oak note. The palate is warm, dry and structured, with fine spice and a long, austere finish.
This grappa is complex and contemplative: a clear expression of Nebbiolo's floral profile and elegance, sharpened by gentle oak ageing and Marolo’s precise distillation.
