Grappa di Barolo 15 Years marks the point where Marolo’s aged series moves from richness into real authority. The fruit of Nebbiolo remains present, but fifteen years in wood create a darker, more austere and more profoundly spiced expression.
Since founding the distillery in 1977, Paolo Marolo has approached maturation as a form of design rather than disguise. The barrel is chosen to enhance the natural beauty of the grappa, not to conceal it. Fresh Barolo pomace is distilled through the family’s slow discontinuous bain-marie method, then entrusted to time.
The grappa matures for 15 years in small oak and acacia barrels. Oak contributes structure, spice and depth, while acacia brings a more delicate aromatic lift and helps preserve the underlying character of Nebbiolo.
In the glass, it presents a deep amber colour that immediately suggests concentration. The nose is powerful and layered, led by clove, black pepper, nutmeg, anise, liquorice and tobacco. Beneath the spice are plum, candied fruit, dried fruit and the floral-balsamic character of Nebbiolo.
The palate is dry, firm and enveloping rather than sweet, with considerable aromatic force and a long finish of tobacco, dark spice, liquorice and mature fruit. For drinkers who value structure and complexity over simple softness.
