








Hilberg-Pasquero Six bottle collection: A Piemonte family table
This six-pack introduces Hilberg Pasquero through the grapes, hills and contrasting personalities of Piedmont. Two bottles of 29.5 Nebiø form the centre of the case, joined by Val Martin, Mon Surì, Vareij and Sulla Stella.
The estate grew from the meeting of Annette Hilberg and Michele Pasquero in the early 1980s, bringing together Annette’s German background and Michele’s roots in the Roero countryside. Their work developed into what the family calls Bioergodynamics: an approach combining agricultural tradition, scientific observation, biodiversity and the active judgement of the grower.
Their vineyards lie around Priocca, on the south-eastern edge of Roero. Here blue clay, marl, chalk and sand meet across a wild, hilly landscape. Clay retains water and slows ripening, marl and limestone contribute structure and mineral tension, while sand encourages softer tannins and lifted aromatics.
29.5 Nebiø is included twice because it delicous and captures the open, generous spirit of the estate. Its name refers to the 29.53 days of the lunar cycle and to the Piedmontese pronunciation of Nebbiolo. It is fragrant and finely structured, with red cherry, raspberry, rose, herbs and supple Nebbiolo tannins. Two bottles of 29.5 Nebiø are included in this Six-Pack.
Val Martin comes from a wooded valley rich in biodiversity and home to a truffle ground. The Nebbiolo is harvested by hand, fermented gently with whole berries and transferred to neutral wood near the end of fermentation, remaining on its fine lees for several years. It is graceful and persistent, built around red fruit, flowers, silky tannins and the quieter, contemplative side of Roero.
Mon Surì takes its name from an old Piedmontese term for the most highly regarded vineyard sites, those considered capable of producing complexity and ageing potential. It comes from separate micro-parcels of Nebbiolo at least 40 years old. Each lot is matured according to its character in small or large wooden vessels, with new oak limited to a maximum of 20%, before an extended maturation of at least four years. It is a serious, slowly unfolding expression of Nebbiolo, it is comparable to best wines of Barolo and Barbaresco. This is deep and serious wine full of complexity and intrigue.
Vareij reflects another side of the estate. Its name recalls the Pasquero family nickname and the valley near their home. Brachetto brings roses, wild strawberry and aromatic lift, while Barbera contributes colour, acidity and structure. Bright, juicy and wild, it can be served slightly chilled and works naturally at the beginning of a meal.
Sulla Stella comes from the sunny Colle della Stella overlooking the Tanaro Valley towards Barbaresco. Barbera grows here on white clay in an open, constantly ventilated position. Slow maturation, fine-lees contact and careful oxygen management give the wine depth and texture while preserving Barbera’s natural freshness. It is generous and savoury, with cherry, dark fruit, earth and spice.
Together, the six bottles capture Hilberg Pasquero as a family estate and as a way of drinking. There is wine for the first glass, wine for food, wine to follow over an evening and wine to put aside. The case moves from the aromatic freshness of Vareij to the depth of Barbera and through three individual readings of Nebbiolo.
