
Capovilla Grappa di Traminer
Traminer is one of the most naturally aromatic grapes used for grappa, but intensity alone is not enough. In Capovilla’s hands, its floral and exotic character is distilled with restraint, creating a spirit that is expressive without becoming perfumed or sweet.
Vittorio Capovilla built his reputation on the belief that great distillation begins before the still is heated. Raw material must be fresh, healthy and intensely aromatic. Once it arrives at the distillery, every stage is designed to protect what is already present rather than manufacture flavour.
The Traminer pomace completes its fermentation before undergoing two slow distillations in small copper bain-marie stills. The clear spirit then rests in stainless steel until its primary aromas and more complex secondary notes are fully integrated. It is reduced to 41% with spring water from the Monte Grappa massif, without oak, added sugar or flavouring.
In the glass, it is crystalline and highly fragrant. Rose petal, orange blossom, lychee, white peach and fresh grape skin lead into notes of citrus peel, gentle spice and dried flowers. The palate is soft in texture but completely dry, with aromatic clarity, fine warmth and a clean floral finish.
This is one of the most aromatic of the grappas that Capovilla produces, but also one of the most precise. It offers an excellent introduction to Capovilla’s ability to preserve the identity of a grape through distillation rather than disguise it behind alcohol.
