2018 Capovilla Grappa di Bassano

Grappa di Bassano is Capovilla’s most explicitly local grappa, made from pomace originating from grapes grown and vinified within the municipality of Bassano del Grappa. Rather than focusing on a single variety, it brings together the different voices of the area in one clear and precise spirit.

The 2018 is composed of 35% Cabernet Franc, 35% Merlot and 30% Pinot Blanc. Cabernet Franc contributes herbs, spice and a firmer savoury line; Merlot brings rounder fruit and softness; Pinot Blanc lifts the blend with white flowers, fresh grape and a more delicate aromatic edge.

Vittorio Capovilla opened his distillery in 1986 after more than a decade studying and refining the Central European tradition of small-batch distillation. His approach begins with uncompromising raw material and aims to preserve its identity rather than manufacture flavour through wood, sugar or excessive rectification.

The pomace undergoes two slow distillations in small copper stills heated through a bain-marie system. The grappa then rests in stainless steel for as long as necessary before being reduced to 41% with spring water from the Monte Grappa massif. There is no oak influence, allowing the grape varieties and place to remain transparent.

In the glass, it is crystal clear. The nose opens with fresh grape skin, pear, white flowers and red plum, followed by dried herbs, black pepper, almond and a cool mineral note. The palate is dry and finely structured, combining gentle fruit with herbal freshness, clean warmth and a persistent savoury finish.

Grappa di Bassano 2018 is not defined by the power of one famous grape. It is the voice of the birthplace of this spirit. Its importance lies in origin: a genuine local blend, distilled with the precision that made Capovilla one of the defining names of modern Italian spirits.
