
2023 Salvo Foti 'Vinudiluce' Rosato
'Vinudilice' is a high-altitude Rosato from the northwestern slopes of Mount Etna, produced in the Vigna Bosco vineyard in Contrada Nave (Bronte) at 1,200 metres above sea level. This is one of the highest vineyard sites in Italy. The vineyard sits on ancient volcanic terraces surrounded by oak forest and is planted with a traditional field blend of red and white varieties, including Nerello, Minnella, Grecanico, and Grenache, coexisting for over a century.
The wine is made from co-harvested grapes, vinified together with minimal intervention. Whole-cluster pressing is followed by natural settling and spontaneous fermentation with indigenous yeasts. No sulphur is added, and the wine is aged for 5 months in stainless steel with natural clarification and minimal rackings.
In the glass, it shows a very pale, delicate rosé color. The nose is lifted and pure, mountain-driven, with wild strawberry, citrus peel, white flowers, and subtle saline, volcanic notes. On the palate, it is round, deep, textural, bright, vertical, and highly energetic, with bright acidity and a long, mineral-driven finish that reflects its altitude and wild environment. A better Rosato in Italy would be hard to find.

Perfect as a gastronomic Rosato or aperitif, it pairs well with seafood, raw fish, light Mediterranean dishes, and fresh cheeses. A pure expression of high-altitude Etna, defined by freshness, tension, and volcanic energy.
