2023 Hilberg Pasquero '29.5 Nebiø' Nebbiolo

'29.5 Nebiø' is a finely drawn expression of Nebbiolo from Hilberg Pasquero, rooted in the hills of Priocca, not far from the famous vinyards of Barbaresco. The name recalls the Piedmontese word nebio for Nebbiolo, while 29.53 refers to the lunar cycle, a quiet nod to time, rhythm, and natural balance.

The wine is gently destemmed and fermented with delicate punch-downs to preserve the purity of the fruit. Fermentation begins in stainless steel or concrete and finishes in seasoned oak, where the wine rests on its fine lees for over a year, gaining texture, depth, and a more refined tannic frame.

In the glass, it shows a transparent ruby red colour. The nose is elegant and expressive, with rose, red cherry, raspberry, wild herbs, and a light balsamic note. On the palate, it is fresh, vibrant and medium bodied with finely structured chalky tannins, bright acidity, and a long cherry fruited finish.
