2021 Elio Altare 'Unoperuno' Barolo
Unoperuno 2021 is one of Elio Altare’s most meticulous and limited expressions of Barolo, a project defined by precision and an almost obsessive pursuit of purity. Sourced from a selection of parcels across the estate’s vineyards, all with southern and south-eastern exposures on marly clay and sand soils, this cuvée is produced in extremely small quantities. The name itself reflects the philosophy behind it: each berry is hand-destemmed “one by one” (Uno per Uno) ensuring that only the finest fruit enters the fermentation, free from any imperfections.
In the glass, it shows a light ruby red color with delicate garnet reflections, highlighting Nebbiolo’s characteristic transparency. The nose is pure and finely detailed, with fresh red fruits, rose petals, and lifted floral notes that express clarity and precision.
On the palate, the wine reveals its true identity: warm, elegant, and seamlessly textured, with remarkably smooth, silky tannins that glide effortlessly. There is a sense of refinement and focus throughout, where purity of fruit takes center stage, supported by balance and subtle depth. The finish is long, clean, and persistent, leaving a delicate impression of red fruit and floral nuances.
Ideal with refined dishes such as veal, game, or traditional truffle-based preparations, Unoperuno stands apart as a study in precision and intention. This new wine from Altare is a Barolo that speaks not through power, but through purity, detail, and quiet intensity.
