
2020 Hilberg Pasquero 'Val Martin' Nebbiolo d'Alba Superiore
'Val Martin' takes its name from the valley where the vineyard is located, in the wilder side of Roero: a landscape of woods, freshness, biodiversity and truffle-rich soils. It is a different expression of Nebbiolo from the more austere wines of Barolo or Barbaresco, shaped instead by light, slope and a more delicate sense of fruit.
Hilberg Pasquero works with a deeply personal approach to farming, often described by the estate as Bioergodynamic. The focus is not only on biodynamics, but on the relationship between vineyard, ecosystem and human work. In Val Martin, that philosophy translates into a Nebbiolo that is graceful rather than forceful, with perfume, softness and quiet persistence.
Made from 100% Nebbiolo, the vineyard sits on steep west-facing slopes, where the last light of the day helps the fruit reach full phenolic ripeness. The soils are rich in lime and clay, giving the wine both freshness and gentle structure. The grapes are hand-harvested, delicately destemmed and fermented with indigenous yeasts, using soft punch-downs of whole berries in stainless steel or concrete. Toward the end of fermentation, the wine is moved into neutral wood, where it rests on its fine lees for a minimum of 2 years.
In the glass, it shows a bright ruby-garnet colour. The nose is refined and floral, with red cherry, raspberry, violet, rose, sweet herbs and a subtle earthy note. On the palate, it is elegant and finely textured, with silky tannins, fresh acidity and a long, graceful finish.
Val Martin is not a Nebbiolo built on power. It is a wine of finesse, light and time: fragrant, composed and contemplative, with the structure to evolve but the softness to enjoy without waiting too long.
