
2015 Gravner Ribolla MAGNUM
Few names carry the weight of Joško Gravner. Based in Oslavia, on the border between Italy and Slovenia, Gravner is one of the figures who changed the modern understanding of white wine. His story is not one of nostalgia, but of radical conviction: after mastering the polished, technology-driven style of the late twentieth century, he turned away from it in search of something deeper, older and more truthful.
That search led him to Georgia, to buried qvevri and to a way of making wine that treats time not as a cost, but as an essential ingredient. For Gravner, it was not enough for the grape to be fresh or varietal. It had to show depth, structure, memory and place. The result of this is Ribolla, a wine that became a cult in the industry.
Crafted from 100% Ribolla Gialla, the wine ferments naturally in buried Georgian qvevri, with extended skin contact for six months. It is then pressed and aged for six years in large oak barrels before release. This long, uncompromising process gives the wine its distinctive amber colour, tannic frame and extraordinary sense of stillness.
In the glass, it presents a deep amber hue. The nose is complex and layered, opening with dried apricot, candied orange peel, chestnut honey; followed by notes of black tea, resin, and wildflower honey.
As it evolves, aromas of incense, dried chamomile, and sweet spices emerge, with subtle oxidative nuances that add depth and character. On the palate, it is full-bodied and textured, yet remarkably fresh, with a pronounced saline minerality that carries through a long, persistent finish marked by lingering spices, candied citrus, and smoky undertones.
Presented in Magnum, this larger format offers slower, more graceful ageing, preserving freshness while allowing the wine to develop greater complexity and depth.
