2023 Standish 'The Schubert Theorem' Shiraz
The Schubert Theorem comes from Roennfeldt Road in Marananga, a site of deep red-brown earth with crystalline quartz, and is made from 100% Shiraz. Its name refers both to the Schubert vineyard connection and to knot theory: the idea that a structure can be broken into parts and reassembled into something greater. In the context of the wine, that translates into selected sections of the vineyard brought together for power, detail, and precision.
In the glass, it is dark, glossy, and almost inky. The nose is intense but refined, with black cherry, blueberry, plum, violet, rose petal, graphite, nori, iodine, bay leaf, dark spice, and blood-orange lift. On the palate, it is deep and sculptural, with concentrated fruit, saline acidity, fine-grained tannins, and a long, dark, mineral finish. The 2023 release has been described as combining power and precision, with concrete egg use contributing to purity and finesse.
This is the most architectural of the four: darker than Lamella, more polished than The Standish, more intellectual than The Relic. It is a wine of symmetry, density, and controlled force.
Perfect with Wagyu beef, roasted lamb, game, black garlic, truffle, mushrooms, and rich reduction-based dishes. Or, really, just by itself.
