2023 Monte dall'Ora 'Saseti' Valpolicella
Saseti is the purest and most direct face of Monte Dall’Ora’s Valpolicella: bright, fragrant, and shaped for the table. It comes from the hills of Castelrotto and San Pietro in Cariano, where old pergola-trained vines on limestone and calcarenite soils give a wine of freshness, savoury detail, and easy rhythm.
The blend is 40% Corvina, 30% Corvinone, 20% Rondinella, and 10% Molinara and Oseleta, from vines between 25 and 70 years old. The vineyards sit at 70–200 metres above sea level with south-east exposure. Fermentation is spontaneous with indigenous yeasts for 6–7 days in stainless steel and unlined cement, followed by a short ageing in steel and cement before bottling.
In the glass, it shows a bright ruby colour. The nose is fresh and delicate, with small red berries, iris, rose, and a lightly spicy lift. On the palate, it is agile and savoury, with bright acidity, mentholated notes, crunchy spice, and a clean, refreshing finish.
This is Valpolicella in its most versatile register: light-footed, fragrant, and made for the table rather than contemplation alone.
Perfect from aperitivo through the full meal, especially with salumi, soups, white meats, and richer fish dishes.
