2022 Occhipinti 'SM' Grillo
Santa Margherita is Occhipinti’s single Contrada expression of Grillo, grown high above Vittoria at 490 metres on a patchwork of chalk, fossils, sand and limestone rock. It is a white wine with a strong sense of landscape: Mediterranean in origin, but shaped by altitude, salinity and the cooler breath of the Iblei Mountains.
Made from 100% Grillo, the wine ferments with indigenous yeasts in cement tanks and 25 hl oval Austrian oak barrels. It then matures for 10 months in concrete and Austrian oak, followed by 4 months in bottle. The result is a structured, mineral and deeply territorial expression of Grillo, far removed from simple freshness.
In the glass, it shows a luminous golden colour. The nose is layered and savoury, with citrus peel, yellow apple, wild herbs, chamomile, almond, sea salt and a subtle smoky-mineral note. On the palate, it is textured and precise, with firm acidity, saline depth and a long, chalky finish.
A serious Grillo from Santa Margherita, combining Mediterranean fruit, limestone tension and quiet complexity.
Perfect with shellfish, grilled fish, raw seafood, roast poultry, vegetable dishes, aged cheeses and refined Sicilian cuisine.
