Sebastian Van de Sype’s Rifermentato in Bottiglia is a bottle-refermented Lambrusco Grasparossa produced in Castelvetro di Modena, in the Levizzano hills of Emilia-Romagna. Sourced entirely from 15-year-old vines, the vineyard benefits from east–south–west exposures, ensuring balanced ripening and full aromatic expression of the variety.

Made from 100% Grasparossa di Castelvetro, the wine follows a second fermentation in bottle and no disgorgement, remaining sur lie to preserve texture and authenticity. Vinification begins with destemming and gentle crushing, followed by fermentation in stainless steel tanks using indigenous yeasts via a pied-de-cuve. The second fermentation is carried out in bottle using must from the same vintage. The wine is neither fined nor fully filtered. 

In the glass, it shows a deep ruby red color with a naturally cloudy, vibrant appearance. The nose is expressive and rustic, with aromas of dark cherry, blackberry, and wild berries, layered with earthy undertones and subtle floral hints. On the palate, it is dry, lively, and textured, with fine natural effervescence, bright acidity, and a savory, slightly wild finish that reflects its artisanal, unpolished character.
