Sebastian Van de Sype’s Ancestrale 2021 is a traditional-method, bottle-fermented Lambrusco produced in Castelvetro di Modena, in the Levizzano hills of Emilia-Romagna. Sourced from 15-year-old vines at Tenuta La Fiaminga (Via Medusia), the vineyard spans east–south–west exposures, ensuring balanced ripening and full varietal expression.

Made from 100% Grasparossa di Castelvetro, this wine follows a single fermentation approach that begins in stainless steel using indigenous yeasts via a pied-de-cuve, before being bottled to complete fermentation with residual natural sugars. It is then disgorged "à la volée", resulting in a cleaner, more defined expression compared to sur lie styles. The wine is unfined, unfiltered, and produced with minimal sulphur.

In the glass, it shows a deep ruby red color with fine, lively bubbles. The nose is fresh and expressive, with aromas of dark cherry, blackberry, and ripe red plum, lifted by subtle floral and earthy notes. On the palate, it is dry, vibrant, and energetic, with crisp acidity, fine mousse, and a clean, focused finish that highlights fruit purity and tension.
