2020 Poderi del Paradiso Vin Santo di San Gimignano
Poderi del Paradiso’s Vin Santo is a traditional Tuscan dessert wine from the hills of San Gimignano, made from Trebbiano Toscano and Malvasia Bianca Lunga. The grapes are dried until December, concentrating sugars, aromas, and texture before a gentle pressing; the wine is then aged for four years in traditional small oak barrels known as caratelli, which are deliberately left partially full to encourage gentle oxidative development. This slow exposure to air, together with the natural passing of the seasons, gives Vin Santo its distinctive complexity, amber depth, and layered notes of dried fruit, honey, almond, and spice.
In the glass, it shows an intense golden-yellow colour with amber highlights. The nose is rich and enveloping, with aromas of dried fruit and aromas typically present on Italian Christmas tables: figs, dates, and honey. On the palate, it is sweet but never heavy, supported by full body and lively acidity, with a very long finish marked by almond and honey notes.
A classic meditation wine, perfect with traditional Tuscan cantucci, dry pastries, and aged cheeses, this Vin Santo balances sweetness, depth, and freshness in a distinctly Tuscan style.
