2020 Hilberg Pasquero 'Vareij'

Vareij is a floral, lifted wine marked by rosehip aromatics and a dry, fresh structure. It is an offbeat expression that can easily be mistaken for a white wine in blind tasting, due to its pale appearance, high tension, and aromatic profile. The blend is based on Brachetto and Barbera, bringing together aromatic lift and red-fruit energy, handled with a very light touch to preserve finesse and clarity.

In the glass, it shows a light ruby, almost translucent colour. The nose is delicate and expressive, with rosehip, dried petals, and bright red berry notes, underlined by a subtle floral lift. On the palate, it is dry, crisp, and linear, with a light body, vibrant acidity, and a faint herbal edge that adds definition. The finish is clean and highly refreshing.

Ideal with spiced dishes, aromatic cuisine, or soft goat cheese, where its freshness and floral profile can contrast and elevate the flavours.
