2018 Hilberg Pasquero 'Sul Monte' Nebbiolo
Sul Monte is a refined and aromatic Nebbiolo, defined by finesse, floral lift, and a silky tannic structure. The wine originates from 35-year-old vineyards set on steep, south-west facing slopes of white clay, where the vines are exposed to the final rays of sunset. Each parcel is vinified separately and named after natural elements that reflect its identity — such as Ramarro, Farfalla, and Rosmarino — before being assembled into the final expression of Sul Monte.
In the glass, it shows a bright ruby red with subtle garnet highlights. The nose is fine and expressive, leaning toward red fruits, rose petals, and a delicate floral character, supported by hints of wild herbs and soft spice. On the palate, it is elegant and linear, with silky tannins and a fresh, lifted fruit profile. The structure is precise rather than powerful, unfolding into a long, graceful finish marked by purity and aromatic persistence. Made for those who appreciate detail, restraint, and aromatic clarity over sheer concentration.
