NV Costadilà '450' Bianco Frizzante
Costadilà 450 is a vibrant and incisive expression of the Veneto hills, crafted from Glera, Bianchetta Trevigiana, and Verdiso grown on chalky soils around Combai. Sourced from vineyards dating back to the 1950s, it reflects a younger, more energetic profile within the Costadilà range. A short skin maceration of around 10 days, spontaneous fermentation, and refermentation in bottle with fresh must from dried grapes create a naturally sparkling wine of texture and tension, produced without filtration and in a low-intervention style.
In the glass, it shows an intense straw yellow with golden reflections. The nose is expressive and layered, with aromas of wildflowers, hawthorn, and acacia, followed by hints of medicinal herbs and a delicate spice recalling green cardamom and ginger. On the palate, it is zesty, sharp, and highly energetic, with bright acidity and a fine, well-integrated perlage. A subtle astringency on the finish adds structure and grip, giving the wine a more serious and textural profile.
Unlike a traditional Prosecco, which is typically made for immediate softness, fruit purity, and consistency through industrial secondary fermentation, Costadilà 450 follows a completely different philosophy. It is refermented in bottle, unfiltered, and shaped by indigenous yeasts and skin contact, resulting in a wine that is more structured, savory, and mineral. Where Prosecco tends toward straightforward aromatics and easy drinking, 450 emphasizes texture, tension, and a more raw expression of its vineyard origin.
Versatile at the table, it pairs beautifully with Venetian cicchetti as well as more aromatic dishes, including spiced cuisine such as chicken or vegetable tagine.
