Their work is rooted in organic and biodynamic farming, old local varieties, spontaneous fermentation and the belief that wine should reflect the living balance of the vineyard rather than cellar technique.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eSaseti\u003c\/strong\u003e is Valpolicella in its simplest and most traditional, form. It comes from terraced vineyards between Castelrotto and San Pietro in Cariano, planted on limestone-rich soils and cultivated under pergola. The indigenous varieties Corvina, Corvinone, Rondinella, Molinara and Oseleta are fermented spontaneously in stainless steel and unlined cement, preserving freshness, perfume and the natural energy of the fruit.\u003c\/p\u003e\n\u003cp\u003eIn the glass, Saseti is bright and fragrant, with red cherry, wild berries, rose, dried herbs and gentle spice. In the glass, it shows ripe red and black cherry, cranberry, plum, pepper, dried herbs and earthy spice. Its name comes from the flexible willow shoots historically used to tie vines against the strong winter winds that cross the hill of Castelrotto, and it's visible at the top of the capsule as a nod to this old tradition.\u003c\/p\u003e\n\u003cp\u003eOnly selected bunches are harvested by hand and placed in wooden trays to dry naturally for approximately three months. The concentrated grapes then ferment spontaneously in open vats before the wine undergoes a long maturation in large oak casks and bottle.\u003c\/p\u003e\n\u003cp\u003eStropa is powerful without relying on sweetness or excessive extraction. Dried cherry, plum and blackberry meet tobacco, balsamic herbs, pepper and warm spice.
