He sources pomace from growers who share his respect for nature and requires it to reach the distillery quickly, protected from oxidation and unnecessary sulphur.\u003c\/p\u003e\n\u003cp\u003eThe pomace is distilled twice in small copper stills using a slow bain-marie system, allowing Capovilla to select only the most refined part of the spirit. It then rests in stainless steel for as long as required and is diluted to 44% with spring water from the Monte Grappa massif. The absence of oak keeps the profile transparent and focused on Nebbiolo itself.\u003c\/p\u003e\n\u003cp\u003eIn the glass, it is crystal clear. The nose is fine and layered, with rose, raspberry, red cherry and dried violet, followed by sage, liquorice, tobacco and pepper.
