The terraced vines grow on limestone and calcarenite soils and are farmed organically and biodynamically, with the traditional grapes of Valpolicella trained in pergola.\u003c\/p\u003e\n\u003cp\u003eThe blend is led by Corvina, Corvinone and Rondinella, with smaller amounts of Molinara and Oseleta. After the initial Valpolicella fermentation, the wine undergoes the traditional Ripasso process, naturally refermenting on the sweet pomace left after the estate's dried-grape wines have been drawn off. It then matures in 25-hectolitre oak casks followed by further ageing in bottle.\u003c\/p\u003e\n\u003cp\u003eSausto is richer and more layered than the estate's straight Valpolicella wines, but still carries Monte dall'Ora's characteristic freshness. Ripe cherry and dark plum lead into dried herbs, tobacco, cocoa and sweet spice.
