Fermentation takes place in concrete and stainless steel vats, with a long maceration of roughly 20–30 days, depending on the variety. The wine is then raised for several months on fine lees, with around 25% in barrique, and the rest in neutral vessels.\u003c\/p\u003e\n\u003cp\u003eIn the glass we have ripe blackberries, plums and black cherries lead the nose; followed by cedar, cocoa, tobacco and a touch of sweet spice.
