The Pinot Noir vines were planted before 1915, and the poor, stony soil has a high chalk content. This is a tiny source of exceptionally old-vine fruit, giving the wine concentration without the need for aggressive extraction.\u003c\/p\u003e\n\u003cp\u003eThe domaine works sustainably, harvests by hand and ferments with ambient yeasts. The fruit is largely destemmed, with gentle pump-overs and limited punch-downs. Élevage takes place in barrel, with a high proportion of new oak used for this grand cru, followed by bottling generally without fining or filtration.\u003c\/p\u003e\n\u003cp\u003eIn the glass: black cherry, raspberry and cassis are joined by violet, sweet spice, cocoa and a cool mineral note. The palate is concentrated but finely shaped, with ripe fruit, energetic acidity and polished tannins. Oak gives us a gentle spice, but the finish returns to red fruit, limestone and a precise savoury line.\u003c\/p\u003e\n\u003cp\u003eÉchezeaux can vary greatly across its many lieux-dits.
